Chicken Soup with Potatoes


Here is a lovely recipe submitted by our very own amazing subscriber, We all should know Bella by now and also know anything that comes from her must be super great. Today she will be showing us how she made her own chicken soup with potatoes.., looking at this already shows that it will taste great.. We all love some great chicken soup recipe and check out how Bella made hers.. enjoy

Ingredients

Potatoes
Chicken
Garlic
Ginger
Seasoning
Onions
Green Pepper
Red Pepper
Scotch Bonnet
Tomatoes
Carrots
Peas

Directions

  • For the potatoes y ou can either roast, cook or fry in your desired shape.

  •  Wash chicken and place in a large pot, add water, garlic, ginger, seasoning and onions.

  • Bring to boil

  •  In a separate pot, pour vegetable oil,add onion and ginger, fry.

  •  Add sliced green and red pepper, scotch bonnet, tomatoes and fry till dry,add your stock and chicken. You can debone or leave it. Cook. 

  • Add carrots and peas when almost done.

  • Simmer and serve.

Irish Potato and Veggie Soup

We love soups, and that is why we are always so happy when we come across new and  innovative soup recipes, Vivian sent in this cool irish potato and veggie soup recipe which we have tried out. This soup tastes great, looks great and is indeed healthy. It is a great dinner idea as you should always eat light for dinner. It is indeed a desirable meal for everyone who has tasted it, it will leave you wanting for more.
Check out how Vivian made this soup and try it out at home, you will not regret that you did.


Ingredients.                                                                                        
  • ‎Flour
  • Groundnut oil 
  • Onions
  • Fresh yellow peppers, black pepper, chilli
  • Chicken/ snails, liver, kidney, chicken intestines. 
  • Curry, thyme, salt, Stock cube, nutmeg
  • Carrot, green peppers, spring onion, lettuce‎.                                                                          

Directions

  • Spice your chicken, snail, kidney, liver, chicken intestine to taste  in a pot until it starts to bring out little water on its own . Allow the spices to heat into the meat and lower your heat for 15mins.

  • Add water into your meat stock about a full cup and allow to simmer till meat is almost done.

  • In a dry clean pot Fry two dessert spoons of flour in ‎a little preheated groundnut oil until its a little bit brown, add your already spiced cooked meat items.

  • Mix the fried flour with the meat stock in the pot until its smooth, add in your already peeled and diced potatoes ( for me I cut in four equal halves).

  • Allow to boil for 20mins 

  • Add your sliced carrot, green pepper, onion, spring onion, black pepper to taste. Cut veggies the way you will like to see them in the pot but don't cut too tiny.

  • Serve after adding the veggies as heat kills the veggies.

    Wedneday Food Menu with Excercise for weight Loss (NFC weight loss programme)


    Good morning, it is Wednesday, and welcome to your weight loss programme course with NFC. We hope that you enjoyed the programme yesterday, and we also hope that you found it easy to follow through, if you did not, do not give up and we urge you to keep trying.



    We have cool meals and exercise routines for you today, but as usual, before you start, we will like to draw your attention to the important things you most adhere to:
    • Do not starve yourself.
    • Drink water 30 minutes before any meal.
    • When eating, eat slowly, this way, you eat less because your brain quickly picks up the signal of you being full.
    • Stay away from soda and other processed drinks, if you have a craving for one, take a glass of water instead.
    • Snack on fruits with low Glycemic index instead of road sides snacks that are not beneficial for your weight loss.
    • Exercise, does not have to be the rigorous gym sort of exercise or jugging, start with walking maybe 30 minutes, use stairs instead of elevators, go to the park with your kids, just anything that will require you using your physical body.

    Breakfast: you can have  an oat this morning, one great thing about the oat meal is that
    you get filled up with just little quantity and you become less hungry almost through out the day, you can check our post on the oatmeal diet for weight loss. Check the post here

    Exercise: take a walk today, but instead of a 30 minute walk, you may increase it to a 50 minute walk, you may or may not walk on a faster pace, this is depending on how much your body has accepted your new routine. Do not start pushing your limit yet. If you have your skipping rope, you can skip 20 times. If your body can take more, the better, but if it can not, you have to keep trying bit by bit until your body gets used to it.

    Snack: As usual, have yourself a low glycemic index fruit.

    Lunch: you can have the rivers native soup with wheat for lunch today, PKT taught us how to make this the easy way. Remember, if you must take meat, go for the goat meat and remember to trim fats, but we strongly recommend that you stick with fish (not catfish or titus fish), also use little palm oil, salt and seasoning.     Dinner: As we have emphasised previously, your dinner most always be light, today, you can have the Dambu for diner, this meal, submitted by Bilkisu is super healthy as it involves the use of vegetable like moringa leave, raw(not fried) groundnut etc. Check out to make it here.

      Eba and Edikang-ikong soup


      Edikang Ikong is that popular meal common among the southern eastern people of Nigeria, Though it may seem undesirable because it involves the use of mainly green leafy vegetables, Edikang Ikong is a delicious meal when you have a taste of it, This soup can be taken with any swallows like eba, fufu, wheat etc. It can also be taken with white rice.
      The soup also come with a lot of health benefits accruing from the nutrients of green leafy vegetable, it is indeed a most have for every family.
      The Edikang Ikong is cooked by people differently, though the outcome is usually the same or slightly different, here is how Deyinka made hers.


      Ingredients.. 

      Water leaf
      Ugwu
      Crayfish, 
      Stock cube 
      Onions
      Cameroon pepper
      Smoked ponmo
      Palmoil
      Dried and smoked fish
      Rodo
      Stock fish
      Prawns
      Goat meat/beef

      Directions


      • Rinse both vegetables well, slice onions, and grind pepper.. 

      • Boil beef with onions ponmo, stock fish and fish, add salt and stock cube. 


      • When beef is done, add crayfish, sliced pepper, more onions, and palmoil leave to simmer for 5-7mins. Check for salt.

      • Add drained water leaf, stir and leave to cook for another 5-8 mins, then add ugwu and cook for another 6mins. 

      • Turn off heat and serve with EBA.

      Chicken Pepper Soup and Potato

       

      One of the amazing things about pepper soup is that its one of the few broths you can make to any quantity you please and it wont lose its spicy attribute. Their are numerous types pepper soup like the fish pepper soup, beef pepper soup etc. Though their taste may differ, they all have one thing in common, and that is the aspect of the soup being pepperish. Oluwakemi sent us this unique Chicken and potato pepper soup and here is how to make it.

      Ingredients


      Chicken
      Pepper soup spices
      Irish potatoes
      Curry and thyme
      Salt
      Seasoning cube
      Dry/ fresh scent leaves (efirin)
      Onion
      Black pepper
      Ginger

      Directions

      Wash and boil chicken with onion, salt, thyme and curry (in very little quantity just to give the chicken colour without making the water too yellow)


      When boiled, take out chicken and add pepper soup spices to any quantity you please, ginger, black pepper and seasoning cube.

      Few minutes after boiling add washed scent leaves.


      Boil potatoes with salt.

      When the potatoes are boiled, peel and serve with the pepper soup.


      If you don't put enough pepper it wouldnt be 'pepper' soup, it would just be chicken sauce and ginger.

      Another great thing with pepper soup is that you can go to town with it. You can make spaghetti and enjoy them together, it can be enjoyed alone, with plantain, yam, bread or eba... Don't be afraid to try new compliments.

      Pounded yam , Efo riro and Turkey

       
      Pounded yam is that one Nigerian cuisine, that most  Nigerians love to eat, it is tasty with an amazing texture that makes your mouth watery every time you come across it or eat it. Pounded yam accompanied with a nice Nigerian native soup like efo riro is just out of this world. Every one that has ever tasted this dish will always come back for more.
      The pounded yam, though may be difficult to cook, it is still one of the most demanded food in Nigeria, no wonder business moguls now produce pounded yam flour to make the meal easier to cook.
      Deyinka, who has sent us various recipes, sent us how she made her pounded yam the easiest way, she also sent us a Nigerian native soup (Efo Riro).
       
      Ingredients
       
       
      Yam,
      water,
      any green veggie of choice,
      tomatoes,
      pepper,
      onions,
      palm oil,
      locust beans,
      Stock cube,
      dried and smoked fish,
      turkey
       
      Directions
       
      Peel yams, cut into cubes and boil till soft.

      Place in a food processor or stand mixer till it forms a dough. Scoop

      Wash all ingredients, boil turkey with onions, smoked ponmo and add the fish after 5mins.

      Boil the turkey in its juices first before adding water.

      Blend pepper and boil till water evaporates.

      Add oil in a pot, followed by onions and crayfish, add pepper followed by salt, stock cube and locust beans.

      Add vegetables last and reduce heat. Turn off heat and serve with pounded yam.

      Okro in Sea Food with Swallow

      Soups is one meal every Nigerian can not do without. Their are various varieties of soup that it is almost impossible to know how to make them all.
      Nigeria soups are very good for the body as it involved using mostly green leafy vegetable, which are obviously basking with numerous health benefits needed by the human body everyday.
      One of this soup is the one made with okra, okro soup which can be cooked in various ways. Apart from this soup having various health benefits gotten from green leafy vegetables, it is also tasty and can be made with a little amount of money. So look at it, tasty, healthy and cheap to make. JennyWihGod sent us how she made her okro soup in sea food and we have just one word for it 'B.E.A.UTIFUL'.

      Ingredients;


      Okro
      Vegetable (Uziza leave ie hot pepper leave)
      Shrimps
      Prawns
      Boneless Croca fish
      Ginger
      Ehuru
      Red oil
      Seasonings

       Directions

       Dice okro and onion, grind pepper, grind ginger and ehuru and serve out the water, cut uziza leave. Boil shrimp and prawns (fish in a diff pot)for about 5mins with seasonings to taste and set all aside.

      In a warm pot, add little red oil, allow to cook for a min, add onion, ginger and ehuru water, add fish, prawns and shrimp-boil for 2 mins, add seasoning to taste, add okro and boil then uziza leave and then boil for 2 more minutes.

      Your soup is ready.

      N/B use as little water as you can to enable the soup come out thick

      Can be enjoyed with any swallow of your choice.

      POUNDO YAM AND EGUSI SOUP

       
      Ingredient
       
      Melon seeds,
      Cray fish,
      chicken,
      chicken stock,
      palmoil,
      stock fish,
       ugu leaf,
       Dry Fish,
      Afang Leaf‎,
      wooden spoon,
      locust beans,
      Salt
      ginger and garlic spice,
      cinamon,‎
      onions,
      dry pepper,
      groundnut oil.

      Method for seasoning chicken
       
      • cut chicken to desirable size and clean
      • To the chicken, add ginger and garlic spice, dry pepper, cinamon(a pinch),stock cube and salt,make sure to rub the spices into the chicken and add 1/2 teaspoon of olive or groundnut oil and diced onions. Leave the mixture to stand for atleast 3-4hrs or overnight in a fridge.

      Method for Egusi soup

      Blend egusi with crayfish and onions

      Into the egusi mixture, add little chicken stock and make to desirable thickness

      Heat palmoil and add locust beans to fry a bit,add the egusi lumps to fry

      Add pepper, chicken stock and seasoning ‎,stock fish and stir with wooden spoon 
      ‎
      Add the chicken, dry fish and‎ ugu leaf cook for 3mins

      Lastly add the afang leaf

      Miyan Gyada... (Groundnut soup) with fufu

      One thing we appreciate about the Nigerian community is that, when you think you know all the soup in the country, you start to see new type of soups and you are just amazed by the innovation put into making this soups. That is one thing that makes the Nigerian nation a great one, our different ethnicity and groups has afforded us varieties in lifestyle, ideas and even food. One of this varieties sent by our subscriber (Deyinka) is the Miyan Gyada, also known as the groundnut soup.
      This soup is a great idea to add to your food menu and you will just love it unique taste and texture.
      Ingredients
       
      2cups groundnut
      Spinach leaves
      Tomatoes
      Pepper
      Bell pepper
      Ginger(optional)
      Beef
      Crayfish
      Dried fish/stock fish
      Locust beans
      Salt and stock cubes to taste.
       
      Directions

      • Blend pepper with ginger, toast groundnut in a dry non-stick pan for 5 mins and blend to powder, blend crayfish separately, mix with blended groundnut.
       
      • Boil beef , dry fish with one stock cube and onion with very little water for the juices to extract..
       
      • Add a little stock from the beef to groundnut powder to form paste.
       
      • Place a pot on heat, add palm oil followed by blended pepper. Fry till almost dry, add beef stock, followed by groundnut paste, if too thick add a little water to form a creamy consistency.
       
      • Add your beef, locust beans, one stock cube and stir.
       
      • Lastly add steamed spinach and leave to simmer for 3-5mins.
       
      Serve with any swallow/morsel of choice ( I didn't peel my groundnuts)
      For fufu.
      Easy method.
       
      1. Buy fufu powder and stir in boiling water till its ready when thick.
      2. Buy ready made fufu.
      3.From the scratch... Buy cassava tubers, peel and dice and soak for 3 days without changing the water to let fufu ferment. 
      Drain tubers by placing in a cheese cloth and putting an heavy object on it. Let it sit for 2-3 hrs. Place drained tubers in a mortar and pound to a pulp.
      Bring water to boil and stir pulp in water till it forms a paste OR boil drained tubers in water and pound to a pulp.  I've tried all 3 methods...

      Wheat and Eforiro with Skinless Chicken Recipe.


      Eforiro is a rich vegetable soup basking with green vegetables (spinach/efo tete), tomatoes, meat and sea foods. The eforiro is a popular food common amongst the inhabitants of the Western part of Nigeria, also known as the Yoruba's, it's a special dish made at home, parties and other events.
      Eforiro can be eaten with any swallows (Eba, wheat, pounded yam, semolina, fufu etc) and also can be eaten with rice. Deyinka sent in this food recipe and selfie to teach us on how to make the efo riro better. Also, she has made wheat to complement this vegetable soup. Good healthy food for everyone
       
      Ingredients.


      Green vegetables(spinach/tete)
      Tomatoes
      Onions
      Pepper
      Dried fish(soaked overnight)
      Skinless chicken
      Palm oil
      Locust beans
      Crayfish (roughly blended)
      2 stock cubes
      Salt
       
      Directions.
       
      •  Blend pepper, tomatoes and 2onions. Boil till the liquid dries up.


      • Rinse chicken and boil with dried fish, one stock cube, a pinch of salt and diced onion.



      • Pluck, rinse and slice your vegetables, lightly Blanch them in hot water for not more than one minute. Set aside.



      • Heat your palm oil add 2 sliced onion balls, followed by crayfish, fry till translucent and add your boiled pepper. Keep stirring to avoid burning. Add your 2nd stock cube, stock from the chicken and locust beans.



      • When the fried pepper is almost drying up, add your boiled chicken and fish stir together then add the vegetables.



      • Leave to simmer for 2 minutes and turnoff the heat. The steam from the pot would soften the vegetables more.



        For the wheat
         
        • Place a pot of water to boil.. Once it boiled keep stirring the wheat till it forms a dough. Then add a little water to soften it up, keep stirring till its a little softer dough.

          Rivers Native Soup ( Uhbomsoudo)

          Nigeria has so many native soups, there is at least over 5 (five) soups each from the different tribes of the country. It is also important to note that most of this soups come with various health benefits as they are made with natural ingredients that are packed with a number of nutrients. In the area of soups, Nigerians are indeed lucky. This soup (shared by PKT) is a natives soup from the rivers state in Nigeria.
          How to Cook Rivers Native Soup (Uhbomdoudo)
          Ingredients:

          Uziza leaf
          Stock fish,
          Goat meat,
          Kpomo,
          Snail,
          Shrimps(periwinkle),
          Ofor -Soup thickner
          Big brown crayfish(aka Okporo),
          Native crayfish,
          Fresh yellow pepper,
          Palm oil,
          Seasoning.

          Directions


          • Wash the uziza leaf(2x),slice and set aside.
          • Wash the goat meat,kpomo,snail and stockfish, place in a small pot, add seasoning of choice, onions, seasoning, salt, little amount of yellow pepper, stir(so the ingerdients blend in all the meat),do not add water, allow to boil, add little water and steam for 10 mins, then set aside.
          • Place a moderate pot on heat and add water, palm oil, and allow to boil.
          • Add ofor, pepper, grounded native crayfish, preferred seasoning and allow to boil for 2 minutes.
          • Add the meat broth and stir, allow to boil for 2 minutes.
          • Add the Okporo and periwinkle and stir.
          • Add the Uziza leaf, stir two times and bring down pot immediately.
          NOTE: check the level of water when adding the Ofor, let it not be too thick or too watery. Thank you!!!

          Ewedu

          Ewedu soup is a green, slimy soup mostly eaten by the western people of Nigeria, that is the Yoruba's. This soup can't be eaten alone but with chicken stew or beef stew or fish stew. The ewedu mixture can also include gbegiri (Beans Soup), that is, Ewedu, gbegiri and stew; this mixture is usually used to eat the Amala swallow. Some people use there Ewedu soup to eat white rice, but people mostly find this being an odd combination.

                                                 How to Make The Ewedu Soup
          Ingredients

          Ewedu leaves
          1/2 (half) table spoon of potash
          1 (one) stock cube (optional)
          Egusi(Melon) optional
          Locust Beans (iru)
          Crayfish
          Salt to taste

          Directions


          Pick the leaves, removing the stem of the ewedu.. wash the leaves properly to remove sand

          There are different methods of preparing this

          1) you can blend the ewedu in a blender until smooth
          2)slice the leaves into tiny bits and start with the cooking
          3) put water on fire, add the ewedu leaves, the potash and allow to boil then add egusi (if using) and allow your egusi to cook for about 5min , when soft use the local broom(ijabe) to mash/pound it continously till the desired smoothness is achieved ,add salt to taste, stock cube

          Serve with stew, gbegiri and amala

          Serve Ewedu, with Gbegiri, stew and swallows (Amala or Eba or Semovita or wheat or pounded yam)

          Peanut Soup

          The peanut soup is a soup that should be part of your menu at home and even parties. The soup can either be taken alone or with fufu or rice.



                                                           How to Cook the African Peanut Soup
          Ingredients

          Peanut Butter

          Any Meat of your choice (Beef, fish or chicken)

          Fresh Tomatoes (Mashed)

          Tomato Paste

          Vegetable Oil

          Garlic

          Chilli Pepper

          Black pepper

          Onions( Chopped)

          Stock Cubes,

          Salt to taste

          Directions


          • Heat vegetable oil in a pot over medium high heat, add onions, garlic, stir fry for few minutes, add the mashed tomatoes, tomato paste, stock cube, black pepper. Stir fry the mixture for 10 minutes.

          • Add the meat/chicken stock, peanut butter, stir until peanut butter is melted and mixture is well blended and cook for about 15 minutes

          • Add the salt and pepper to taste and leave to simmer

          *peanut soup can be made with chicken, beef, fish or vegetables, so add any of your choice

          Serve with Fufu or with rice

                                                  The Health Benefits of The Peanut Soup
          1.        Helps Promote Fertility (Folate)
           
          • It contain a good amount of folate and studies have shown that women who had a daily intake of 400 micrograms of folic acid before and during early pregnancy reduced their risk of having a baby born with a serious neural tube defect by up to 70%.

            2. Blood Sugar Regulation
            It can supply the body with of the DV of manganese, a mineral which plays a role in fat and carbohydrate metabolism, calcium absorption, and blood sugar regulation.

            3. Helps Prevent Gallstones
            It lowers the risk of developing gallstones by 25%.

            4. Helps Fight Depression (Tryptophan)
            Peanuts are good sources of tryptophan, an essential amino acid which is important for the production of serotonin, one of the key brain chemicals involved in mood regulation. When depression occurs, a decreased amount of serotonin may be released from the nerve cells in the brain. Tryptophan may raise serotonin’s antidepressant effects when there is an increased amount of serotonin in the blood.

            5. Boosts Memory Power (Vitamin B3)
            It aids or boost the memory.

            6. Helps Lower Cholesterol Levels
            It helps lower and control cholesterol levels. Added to that is their copper contents which aids in reducing bad cholesterol and increase good cholesterol levels.

          Okra Soup



          The Okra soup is a popular soup common amongst the southern/eastern people of Nigeria, the great aspects about this soup is that it is so tasty, super healthy (all greens) and super cheap to make.
           
          One of the feature of the soup is that it draws or that it is slimy, which is the key feature Nigerians love about their soup. The Okra soup is made differently by people in different tribes, although one might end up with a similar or close to similar end result. The Okra soup can be used to eat swallows like Eba, wheat, semovita and fufu. The Okra soup is easy to make and here is how:

          Ingredients

          Okra
          Red Palm Oil
          Beef /shaki /Ponmo
          Dry Fish
          Stock Fish
          Crayfish
          Salt and pepper to taste
          Vegetable – Pumpkin leave
          Stock Cubes

          Directions


          • Chop the okra into tiny pieces and set aside
          • Wash the vegetables and cut into tiny pieces
          • If using Shaki /Ponmo wash and boil till it's done, season the assorted meat with stock cube, salt to taste, onions and add to it and cook till done
          • Add the grated okro and palm oil and cook for about 5minutes
          • Now add the vegetable and stir well, add crayfish, salt and pepper to taste
          • Leave to simmer for 3- 5 minutes
          • Serve with Eba (Garri), Pounded Yam, Fufu, Tuwo Shinkafa

            Ayan-ekpang with Etighi aka Okro soup

            In Nigeria, we just love our slimy soups, from Ewedu to okra and many more, the Ayan-ekpang with Etighi is a special soup among the Efiks and it has been usually viewed as one of the most difficult soups to make.
             At NFC, when it comes to food, our thought is, how hard can it be. So our amazing subscriber  Ushike Egodo has come up with a detailed description of the Ayan-ekpang soup to help us know the best and easy way to cook the soup.                                                        
             
            Ingredients

            Water yam
            Okro
            Shrimps
            Fresh Fish
            Onions
            Crayfish
            Pepper
            Palm Oil
            Uziza Leaf

            Directions


            Ayan-ekpang 

            Take water yam, peel it wash and grate using the local grater. Tie with moi moi leaf and boil until cooked. 

            Etighi / Okro soup 

            I used fresh sea foods, because I prefer them,  

            Wash your shrimps and fresh fish, add onions, salt to taste and any seasoning of your choice and cook for 20 (twenty) minute, add water , add ingredients, like crayfish and pepper, a drop of palm oil, uziza leaf/ hot leaves, cover to cook for 15mins then add the okro/Etighi stir and cook for 5 (five) minutes. 

             And your food is ready to eat.

            Egusi Soup Made with Cowleg

             Egusi seeds are the fat- and protein-rich seeds of certain cucurbitaceous plants.  Egusi is a special soup accepted by everyone in Nigeria, it is made by mostly every Nigerian family and it's a soup that we eat at least ones a week.
            Egusi is a soup eaten with various Nigerian swallows( you could eat it with either Eba, wheat, semovita, pounded yam, semolina, or fufu), some people also eat egusi with white rice, although this complement is not usually used by most. The Egusi soup is cooked differently by the people of Nigeria, here is how our lovely subscriber Mimi made hers:

            Ingredients
            Cow tail
            Stock fish
            Dry fish
            Egusi
            Dry pepper
            Fresh pepper
            seasoning
            palm oil
            vegetable leaves
            Bitter leaf.

            Directions

            Parboil Cow tail adding onions, salt, stock cube, any meat seasoning of your choice. 
            Add warm water to melon, stir and cover
            .

            Fry oil, add onions, fresh and dry pepper, add a pinch of salt to taste, stock cube, stir and cover f‎or few minutes
            Add Cow tail, dry fish, stock fish, stir and cover for 3 minutes.

            Add soaked melon until  properly cooked‎, do not stir.
            Add bitter leaf(properly washed to extract bitterness). 

            When egusi is done, stir properly and add vegetables. 

            Remove immediately, your egusi is ready to be served.
