Ewedu

Ewedu soup is a green, slimy soup mostly eaten by the western people of Nigeria, that is the Yoruba's. This soup can't be eaten alone but with chicken stew or beef stew or fish stew. The ewedu mixture can also include gbegiri (Beans Soup), that is, Ewedu, gbegiri and stew; this mixture is usually used to eat the Amala swallow. Some people use there Ewedu soup to eat white rice, but people mostly find this being an odd combination.

                                       How to Make The Ewedu Soup
Ingredients

Ewedu leaves
1/2 (half) table spoon of potash
1 (one) stock cube (optional)
Egusi(Melon) optional
Locust Beans (iru)
Crayfish
Salt to taste

Directions


Pick the leaves, removing the stem of the ewedu.. wash the leaves properly to remove sand

There are different methods of preparing this

1) you can blend the ewedu in a blender until smooth
2)slice the leaves into tiny bits and start with the cooking
3) put water on fire, add the ewedu leaves, the potash and allow to boil then add egusi (if using) and allow your egusi to cook for about 5min , when soft use the local broom(ijabe) to mash/pound it continously till the desired smoothness is achieved ,add salt to taste, stock cube

Serve with stew, gbegiri and amala
