Waina (Hausa rice cakes) or Massa


Nigeria is a country with diverse culture, tradition, people and with that comes diverse food recipe, cooking method and food in Nigeria. We truly can't complain about not having variety because we have a wide range of delicious delicacies to pick from. Ever heard of a rice cake, the Massa is a rice cake and it's pretty easy to make, thanks to the detailed description of our lovely subscriber.
The Waina (Hausa rice cake) or Massa is a delicacy coming from the Northern part of Nigeria. Our Subscriber Haija Swat from the Northern part of Nigeria sent in this food recipe and selfie to teach us how to make this special delicacy.
 
Ingredients:


1 milk cup raw tuwon rice

1/2 milk cup boiled tuwon rice

4 tablespoons of Sugar

1 level teaspoon of yeast

1 heaped spoon of baking powder

1/4 of a small Onion

Directions


  • Wash and soak the tuwon rice for 3 to 4 hours. The idea is to soften the rice and make grinding easy.

  • Blend it or grand it into a smooth paste. Even if it's watery, no worries, the cooked rice will take care of that later.

  • Mix the yeast in water and add to the rice paste.

  • Cover the paste and put it in the hottest part of the kitchen or under the sun or leave over night to make it fluffy.

  • Mix the sugar and baking powder together and add it to the paste. And add the onions.

  • Then add the little quantity of the cooked rice

    Note: cook the rice very little and make it cool before turning it into the paste.
    • Pre- heat oven. Grease a 12 hole muffin pan with 3 drops of oil or the hausa Tanda for making massa

    • Fill each muffin hole 3/4 full with rice paste.

    • Bake for 15-20 minutes or till an inserted toothpick comes out clean.

    Serve hot with stew or mian taushe. Or just eat with honey.
