Wheat and Eforiro with Skinless Chicken Recipe.


Eforiro is a rich vegetable soup basking with green vegetables (spinach/efo tete), tomatoes, meat and sea foods. The eforiro is a popular food common amongst the inhabitants of the Western part of Nigeria, also known as the Yoruba's, it's a special dish made at home, parties and other events.
Eforiro can be eaten with any swallows (Eba, wheat, pounded yam, semolina, fufu etc) and also can be eaten with rice. Deyinka sent in this food recipe and selfie to teach us on how to make the efo riro better. Also, she has made wheat to complement this vegetable soup. Good healthy food for everyone
 
Ingredients.


Green vegetables(spinach/tete)
Tomatoes
Onions
Pepper
Dried fish(soaked overnight)
Skinless chicken
Palm oil
Locust beans
Crayfish (roughly blended)
2 stock cubes
Salt
 
Directions.
 
  •  Blend pepper, tomatoes and 2onions. Boil till the liquid dries up.


  • Rinse chicken and boil with dried fish, one stock cube, a pinch of salt and diced onion.



  • Pluck, rinse and slice your vegetables, lightly Blanch them in hot water for not more than one minute. Set aside.



  • Heat your palm oil add 2 sliced onion balls, followed by crayfish, fry till translucent and add your boiled pepper. Keep stirring to avoid burning. Add your 2nd stock cube, stock from the chicken and locust beans.



  • When the fried pepper is almost drying up, add your boiled chicken and fish stir together then add the vegetables.



  • Leave to simmer for 2 minutes and turnoff the heat. The steam from the pot would soften the vegetables more.



    For the wheat
     
    • Place a pot of water to boil.. Once it boiled keep stirring the wheat till it forms a dough. Then add a little water to soften it up, keep stirring till its a little softer dough.
