Wedneday Food Menu with Excercise for weight Loss (NFC weight loss programme)

Good morning, it is Wednesday, and welcome to your weight loss programme course with NFC. We hope that you enjoyed the programme yesterday, and we also hope that you found it easy to follow through, if you did not, do not give up and we urge you to keep trying.

We have cool meals and exercise routines for you today, but as usual, before you start, we will like to draw your attention to the important things you most adhere to:
  • Do not starve yourself.
  • Drink water 30 minutes before any meal.
  • When eating, eat slowly, this way, you eat less because your brain quickly picks up the signal of you being full.
  • Stay away from soda and other processed drinks, if you have a craving for one, take a glass of water instead.
  • Snack on fruits with low Glycemic index instead of road sides snacks that are not beneficial for your weight loss.
  • Exercise, does not have to be the rigorous gym sort of exercise or jugging, start with walking maybe 30 minutes, use stairs instead of elevators, go to the park with your kids, just anything that will require you using your physical body.

Breakfast: you can have  an oat this morning, one great thing about the oat meal is that
you get filled up with just little quantity and you become less hungry almost through out the day, you can check our post on the oatmeal diet for weight loss. Check the post here

Exercise: take a walk today, but instead of a 30 minute walk, you may increase it to a 50 minute walk, you may or may not walk on a faster pace, this is depending on how much your body has accepted your new routine. Do not start pushing your limit yet. If you have your skipping rope, you can skip 20 times. If your body can take more, the better, but if it can not, you have to keep trying bit by bit until your body gets used to it.

Snack: As usual, have yourself a low glycemic index fruit.

Lunch: you can have the rivers native soup with wheat for lunch today, PKT taught us how to make this the easy way. Remember, if you must take meat, go for the goat meat and remember to trim fats, but we strongly recommend that you stick with fish (not catfish or titus fish), also use little palm oil, salt and seasoning. Check out to make it here.

Dinner: As we have emphasised previously, your dinner most always be light, today, you can have the Dambu for diner, this meal, submitted by Bilkisu is super healthy as it involves the use of vegetable like moringa leave, raw(not fried) groundnut etc. Check out to make it here.
We hope that you find it easy to follow todays programme, look out for Thursdays programme

    Home Made Chicken Pie

Chicken pie is that one snack that every Nigerian has eaten while growing up. The fast food Mr Biggs just seem to mean meat/chicken pie to me back then.
Meat pie is really a unique meal that is filling and tasty with a good texture that gives a wonderful sensation to the tongue, Sometimes I like to call it the surprise pie, because of the fact that the pie covers what is inside of it. Trust me, you will be surprised by some road side so called meat pie which seem to have just potatoes inside(just when you think you where going to see some meat/chicken in it), that seriously is a bummer.
Our amazing subscriber Ameenat sent us the process in which you can make the meat/ chicken pie and our conclusion to this is "It's not that hard after all''
Check out the Detailed recipe sent in by Ameenat and try it out yourself.

    http://en.wikipedia.org/wiki/Chicken_pie

    Ingredients

    1kg Self rising flour
    1 tablespoon Baking powder,
    500g Butter
    2 medium sized Carrot
    2 medium sized Irish potatoes
    500g minced Chicken
    Salt to taste
    2 Seasoning cube
    1 teaspoon Thyme
2 cooking spoon of Vegetable oil

    Directions

    For the ‎dough
Put 1kg of flour in a bowl

Add 1tablespoon of baking powder and some pinches of salt, mix together

Add 500g of butter bit by bit and mix together‎.

Add water bit by bit  and knead continuously till the dough is formed.

Leave dough for about 5-7 minutes

    For the filling
Dice carrot, boil Irish potatoes and dice as well, minced chicken, cut onions into tiny pieces, once all is ready.

Put little vegetable oil on fire, pour onions, add the minced chicken stir continuously till minced chicken becomes brown.

Add little water, stock cube, thyme and leave to boil once it starts boiling add the diced carrots and Irish potatoes, cook till all done.

    Preheat oven to 170°C (335°F)

Knead the dough more and roll it out to achieve a 5mm thickness.

Make a round cut on the dough with a cutter Scoop some fillings into the center of the round cut

Break an egg and beat and rub on the inside edge of the cut chicken pie dough so that it well sealed

Fold one part of the dough to meet the other end
    ‎
You can seal the pie by using your fingers or fork and pressing along the outside

Repeat steps until all the dough are gone.

Place your pies on a tray, rub the egg on the pies. This gives the pie a golden brown look when done.

Bake for about 30-45 minutes or until the pastry has turned a golden brown.

    Banana Caramel Cake

Cake has been around for so long, it is that special dessert made for special occasions. As the popular saying goes ''a party without cakes is just a meeting''. Many people have come up with different recipes to spice up ordinary cakes and the number of recipes is just countless.
    The Banana Caramel Cakes is that special cake you can make at home and for your occasions. It is tasty and looks good in the eyes. It is also pretty easy to make them, here is how;

    Ingredients

1 1/2 sticks plus 3 tablespoons butter, room temp.
2 3/4 cups all purpose flour
    1 1/2 teaspoon baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
3 very ripe bananas, mashed, plus 3 ripe bananas, sliced lengthwise, for filling
1/4 cup sour cream or creme fraiche
    1 teaspoon vanilla extract
    1 2/3 cups plus 1/4 cup sugar
    4 large eggs

    Directions

Preheat the oven to 350. Butter 2 9 by 2 inch round cake pans; line the bottoms with parchment. Butter the parchment and dust with flour, tapping out excess, set aside. Into a medium bowl, sift together flour, baking powder, baking soda, and salt. In a small bowl, stir together mashed bananas, sour cream, and vanilla; set aside.

In the bowl of an electric mixer fitted with the paddle attachment, beat 11/2 sticks of butter and 1 2/3 cups sugar on medium-high speed until light and fluffy 3-4 minutes, scraping down sides of the bowl as needed. Add the eggs, one at a time, beating well after each addition. With the mixer on low speed, add the flour mixture in two parts, beating until combined after each. Using a rubber spatula, folk in the reserved banana mixture, being careful not to over-mix.

Divide the batter between the prepared pans. Baking until cakes are golden brown, about 30-35 minutes. Transfer pans to wire rack to cool 20 minutes. Invert cakes onto rack, peel off parchment, let cool.

Sprinkle the Remaining 1/4 cup sugar into a large skillet; cook over high heat, shaking the pan occasionally, until sugar is carmelized. Remove from heat; stir in remaining 3 tablespoons butter until melted. Return pan to medium heat. Add the sliced bananas; cook until sliced start to brown, 1-2 minutes. Gently turn the bananas, and cook over medium-high heat until browned, about 2 minutes.

Place one layer on a cake plate; arrange carmelized bananas slices on top. Place the remaining layer on top.

This recipe calls for a mascarpone frosting, but I had no mascarpone, so I decided to just drizzle the rest of the carmel on top.

but a couple words of advice when making this cake:

don’t overcook your carmel like I did, making it like glass. it’s pretty, but hard to eat. hahaa.

make sure you have the cake right beside the bananas when transferring them from the pan to the cake. they don’t hold up very well.

DON’T ACCIDENTLY TOUCH THE HOT CARMEL. IT’S HURTS. BAD.
