Okra Soup



The Okra soup is a popular soup common amongst the southern/eastern people of Nigeria, the great aspects about this soup is that it is so tasty, super healthy (all greens) and super cheap to make.
 
One of the feature of the soup is that it draws or that it is slimy, which is the key feature Nigerians love about their soup. The Okra soup is made differently by people in different tribes, although one might end up with a similar or close to similar end result. The Okra soup can be used to eat swallows like Eba, wheat, semovita and fufu. The Okra soup is easy to make and here is how:

Ingredients

Okra
Red Palm Oil
Beef /shaki /Ponmo
Dry Fish
Stock Fish
Crayfish
Salt and pepper to taste
Vegetable – Pumpkin leave
Stock Cubes

Directions


  • Chop the okra into tiny pieces and set aside
  • Wash the vegetables and cut into tiny pieces
  • If using Shaki /Ponmo wash and boil till it's done, season the assorted meat with stock cube, salt to taste, onions and add to it and cook till done
  • Add the grated okro and palm oil and cook for about 5minutes
  • Now add the vegetable and stir well, add crayfish, salt and pepper to taste
  • Leave to simmer for 3- 5 minutes
  • Serve with Eba (Garri), Pounded Yam, Fufu, Tuwo Shinkafa
