Tasty White Rice, Spaghetti and Chicken Stew


 Adding vegetables to your recipes always seem to amplify it in a way, apart from giving it a different cool taste, the look it gives any food are always or almost always desirable. A good example of this is the recipe (white rice and spaghetti with chicken sauce) submitted by Miz Lurichie. Unlike other spaghetti recipes and rice recipes, this recipes can be made with a very little amount of money, and that is one of the things that make this cool; cool recipe but yet still very affordable.
We are loving the great look of this white rice and spaghetti, and we are also very sure that it will taste super great as well.
This is how Miz Lurichie made this cool meal.


Ingredients :

Carrot
Green beans
Rice
Spaghetti
Chicken‎
Tomato paste.

Directions
‎
Chop your carrot and green beans

Put the rice or spaghetti on fire

A‎fter Par boiling it,when it's half done,add  chopped carrot and green beans to it and allow it to be fully cooked ...

Making the stew: 

Boil your  chicken and season properly

Blend your tomatoes, put it on fire  to boil, after 20mins add up your tin tomatoes, oil and seasonings, make sure it is tasty then you add your chicken,let it boil for 5mins then bring it down.....

Your tasty white rice, spaghetti and chicken stew is ready.

Couscous with Beef Stew and Coleslaw.

This recipe has a great twist in it and we are sure it is obvious to everyone. Ever seen a green couscous, well here is one and we pretty much love the intrigue Bella put into this piece, we love colours and Bella did bring a lot of colours to this meal making it truly artistic.
So here it is, couscous with beef stew and coleslaw, enjoy.


Ingredients 

Coloring, 
Couscous
Tomatoes
Scotch bonnet
Red pepper
Sliced onions
Garlic
Beef
Stock
Seasonings
Cabbage
Carrots‎
Onions‎
M‎acaroni
Cucumber
Mayonnaise
Eggs

Directions‎
‎
Boil water in a pot with little oil, salt and coloring, add couscous, stir and allow to drain. 

Fry blended tomatoes, scotch bonnet, red pepper and sliced onions, add garlic, beef,stock and stir, add seasonings, allow to cook for few mins. 

Mix cabbage,carrots,onions,cooked macaroni,cucumber with mayonnaise and color, add eggs with tomatoes.‎

Pancake Shawarma


We always look forward to Dianne's recipe because we know it has to be good, she is always creative with her cooking and she has shared with us different recipes from Afang soup and fufu to Chicken Casserole and White Rice etc 

 Today she will be showing us the pancake Shawarma, yes you read that correctly :) this is just not pancake but she tagged hers pancake shawarma.
 This is how Dianne made her Pancake Shawarma 


Ingredients 

 Flour 
Sugar 
Pinch of salt 
Peak milk 
 2 Eggs 
Groundnut oil
 Warm water 

 For the sauce 
( Veggies) 
Carrot 
Green 
Beans 
Bacon 
Sausage 
Onions 
Tomatoes‎
 Green pepper ‎

Directions

‎
  • Mix flour, sugar, pinch of salt, peak milk together in a bowl,‎ break in 2  eggs, add warm water and mix well. 

  • Fry in bits with little groundnut oil in a well oiled and non-stick pan 
‎
For the sauce:
  • Dice the veggies(carrot, Green beans, bacon, sausage, onions, tomatoes, green pepper ‎and fry 

  • Then add it to the pancake and wrap it up...

CHICKEN AFRITADA

Etim is such a great cook and we always look forward to his submissions, his recipes, always detailed and well arranged with a little extra to give each meal a special touch.
Etim has come up with another special recipe and that is the Chicken AFritada, a little extra, detailed recipe and we are really loving the outcome of the meal

giving us more great ideas in using the potato ingredient.
CHICKEN AFRITADA

Ingredients:


500 grams chicken (serving slices)
300 grams potatoes
300 grams carrots
100 grams tomato paste
150 grams bell pepper
120 grams green peas
Chicken cubes
300 ml water
1 tablespoon sugar
Ground pepper
4 pcs. dried bay leaves
2 tablespoon cooking veg oil



Directions

  • Heat the oil in a cooking pan. Pan fry the chicken 3 minutes each side or until light brown. Set-aside.

  • Place the cooking pan to the fire again and saute garlic and onion for 1 minute. Add tomato paste, chicken cubes and water. Add the chicken. Cover and let it boil. Simmer for 15 minutes or until meat is tender.

  • Add the potatoes and carrots and simmer for 8 minutes.

  • Add the bell pepper, green peas, sugar and ground pepper. Simmer for 3 minutes.

  • Remove dried bay leaves and serve the chicken afritada with rice.

Stuffed Potatoes

We are loving this amazing idea of stuffing your potato, Bella brought this idea to our notice and now we just want to stuff all the potatoes in our kitchen. This is a cool idea for your breakfast or even lunch. Check out how Bella made the stuffed potatoes, or how she stuffed her potato.

Ingredients:

Minced beef or chicken,
Salt
Stock cube
Curry,
Thyme
Garlic,
Cooked and whisked raw eggs
Blended pepper and
Onions.


Directions

Most people bake the potatoes, but I prefer boiling with salt and stock cubes, (it should not be too soft when boiling, remember you are going to bake later on )

  • When cooked, drain and cut in half vertically or horizontally, which ever way you prefer, make a hole in both halves by scraping and set aside.

  • For the filling, put vegetable oil or butter in a pan, heat

  • Add onion and garlic, thyme, add the blended pepper, fry a bit, add minced beef, salt, curry and stock cubes.

  • Simmer and allow to cool off, then stir in your boiled eggs which you cut in cubes already.

  • Fill the potatoes and cover with the other half

  • Dip in wisked egg and bake till brown.

Irish Potato and Veggie Soup

We love soups, and that is why we are always so happy when we come across new and  innovative soup recipes, Vivian sent in this cool irish potato and veggie soup recipe which we have tried out. This soup tastes great, looks great and is indeed healthy. It is a great dinner idea as you should always eat light for dinner. It is indeed a desirable meal for everyone who has tasted it, it will leave you wanting for more.
Check out how Vivian made this soup and try it out at home, you will not regret that you did.


Ingredients.                                                                                        
  • ‎Flour
  • Groundnut oil 
  • Onions
  • Fresh yellow peppers, black pepper, chilli
  • Chicken/ snails, liver, kidney, chicken intestines. 
  • Curry, thyme, salt, Stock cube, nutmeg
  • Carrot, green peppers, spring onion, lettuce‎.                                                                          

Directions

  • Spice your chicken, snail, kidney, liver, chicken intestine to taste  in a pot until it starts to bring out little water on its own . Allow the spices to heat into the meat and lower your heat for 15mins.

  • Add water into your meat stock about a full cup and allow to simmer till meat is almost done.

  • In a dry clean pot Fry two dessert spoons of flour in ‎a little preheated groundnut oil until its a little bit brown, add your already spiced cooked meat items.

  • Mix the fried flour with the meat stock in the pot until its smooth, add in your already peeled and diced potatoes ( for me I cut in four equal halves).

  • Allow to boil for 20mins 

  • Add your sliced carrot, green pepper, onion, spring onion, black pepper to taste. Cut veggies the way you will like to see them in the pot but don't cut too tiny.

  • Serve after adding the veggies as heat kills the veggies.

    Wedneday Food Menu with Excercise for weight Loss (NFC weight loss programme)


    Good morning, it is Wednesday, and welcome to your weight loss programme course with NFC. We hope that you enjoyed the programme yesterday, and we also hope that you found it easy to follow through, if you did not, do not give up and we urge you to keep trying.



    We have cool meals and exercise routines for you today, but as usual, before you start, we will like to draw your attention to the important things you most adhere to:
    • Do not starve yourself.
    • Drink water 30 minutes before any meal.
    • When eating, eat slowly, this way, you eat less because your brain quickly picks up the signal of you being full.
    • Stay away from soda and other processed drinks, if you have a craving for one, take a glass of water instead.
    • Snack on fruits with low Glycemic index instead of road sides snacks that are not beneficial for your weight loss.
    • Exercise, does not have to be the rigorous gym sort of exercise or jugging, start with walking maybe 30 minutes, use stairs instead of elevators, go to the park with your kids, just anything that will require you using your physical body.

    Breakfast: you can have  an oat this morning, one great thing about the oat meal is that
    you get filled up with just little quantity and you become less hungry almost through out the day, you can check our post on the oatmeal diet for weight loss. Check the post here

    Exercise: take a walk today, but instead of a 30 minute walk, you may increase it to a 50 minute walk, you may or may not walk on a faster pace, this is depending on how much your body has accepted your new routine. Do not start pushing your limit yet. If you have your skipping rope, you can skip 20 times. If your body can take more, the better, but if it can not, you have to keep trying bit by bit until your body gets used to it.

    Snack: As usual, have yourself a low glycemic index fruit.

    Lunch: you can have the rivers native soup with wheat for lunch today, PKT taught us how to make this the easy way. Remember, if you must take meat, go for the goat meat and remember to trim fats, but we strongly recommend that you stick with fish (not catfish or titus fish), also use little palm oil, salt and seasoning.     Dinner: As we have emphasised previously, your dinner most always be light, today, you can have the Dambu for diner, this meal, submitted by Bilkisu is super healthy as it involves the use of vegetable like moringa leave, raw(not fried) groundnut etc. Check out to make it here.

      Moi Moi and Kunun geda

      Moi Moi is just that another great recipe made using beans, it is a creative meal that is tasty, feels good in your mouth, and also very filling. Another great thing about moi moi is that it is a meal that can be easily eaten with other great meals like rice, salad, pap, custard and so many more.
      Moi moi can be made in various ways with different ingredients and methods. Omata sent us this recipe on how she made her moimoi and also a great idea of what you can eat with it.

      Ingredients:

      Beans
      Shombo
      Pepper
      Onions
      Vegetable oil
      Crayfish
      Egg
      Stock cubes
      Salt to taste
      (kunun)groundnut
      White rice(the type use for tuwo)

      Directions


      • Wash beans when soft add shombo, pepper, onions, crayfish and blend

      • Boil eggs, peel slice and set aside

      • Add vegetable oil, stock cubes salt and little water to the blended beans put in santana leather add egg and put on fire.

      Kunun geda

      • Wash groundnut and soak

      • Wash rice too and soak(2hrs i.e before preparing the moi moi)

      • And blend, add water and sieve

      • Put on fire keep stirring until very thick

      Serve with moi moi

      Eba and Edikang-ikong soup


      Edikang Ikong is that popular meal common among the southern eastern people of Nigeria, Though it may seem undesirable because it involves the use of mainly green leafy vegetables, Edikang Ikong is a delicious meal when you have a taste of it, This soup can be taken with any swallows like eba, fufu, wheat etc. It can also be taken with white rice.
      The soup also come with a lot of health benefits accruing from the nutrients of green leafy vegetable, it is indeed a most have for every family.
      The Edikang Ikong is cooked by people differently, though the outcome is usually the same or slightly different, here is how Deyinka made hers.


      Ingredients.. 

      Water leaf
      Ugwu
      Crayfish, 
      Stock cube 
      Onions
      Cameroon pepper
      Smoked ponmo
      Palmoil
      Dried and smoked fish
      Rodo
      Stock fish
      Prawns
      Goat meat/beef

      Directions


      • Rinse both vegetables well, slice onions, and grind pepper.. 

      • Boil beef with onions ponmo, stock fish and fish, add salt and stock cube. 


      • When beef is done, add crayfish, sliced pepper, more onions, and palmoil leave to simmer for 5-7mins. Check for salt.

      • Add drained water leaf, stir and leave to cook for another 5-8 mins, then add ugwu and cook for another 6mins. 

      • Turn off heat and serve with EBA.

      Snail Salad

      Salads are just one food that everyone love to have, their are numerous salads like the abacha, vegetable salad etc.
       Snails taste great, when you know how to specially make it just as Pretty Eyez did.
      We are loving the innovative idea of this snail salad and it looks like it is going to taste great and also have a good texture that you will want to linger before swallowing.
      Pretty Eyez sent in this great recipe and directions to make the snail salad.



      Ingredients:

      (Everything fresh)
      Snail
      Pepper
      Onions
      Utazi
      Ukpaka
      Salt
      Stock cube.

      Directions

      • Add a little salt to the washed Snails and Per boil, drain and set aside.

      • Wash and chop the vegetables and keep each separately.

      • Place a dried pot on the fire, add red oil once d oil is hot put the onions and fry for half a minute

      • Add the pepper, fry for 30sec then add the snail and fry for a minute add the ukpaka and  stock cube, add a pinch of ground cameroun pepper for flavour.

      • Taste and add a little salt.

      • Turn off the fire, add the uttazi and stir.

      Mixed vegetables soup ( Carrot and Potato Soup)

      Eating healthy foods is one of the key to staying healthy, so we are always happy when we come across healthy recipes.
      The mixed vegetable soup is an example of that healthy meal. This recipe submitted by our subscriber Bilkisu (who has sent us various recipes) is a great meal to try out at home for a healthy and happy family as it involves the use of various recipes in which has their individual nutritional values beneficial to us.. Now you get additional idea on how you can inculcate the use of vegetables in your weekly menu.
      Ingredients:
       
      2 large carrots, chopped
      3 med potatoes, peeled & chopped
      1 1/2 cups stock
      2 tablespoon tomato/pepper paste
      3 sausages, chopped
      1 eggplant, chopped
      1 cupful chopped cauliflower
      1 avocado, peeled and cut into cubes
      Seasonings

      Directions:

       
      • Parboil cauliflower in salt water for a few minutes. Keep aside

       
      • Cook potato and carrots in stock with tomato/pepper paste and seasoning till tender. Pour in a blender and pulse till smooth.

       
      • Put back on low heat, add the eggplant, cauliflower and sausages. Season with spices and simmer for a few minutes.

       
      • Garnish with avocado 


      • Serve with wholewheat bread 😋

      Scotch Eggs


      Meat pie, chicken pie donut, sausage roll, and so many pastries one can pick up from, The scotch egg will surely be mentioned amongst the list of popular pastries out there
      This unique pastry is tasty and we love the roughness it gives when eaten.
      Many have wondered how the scotch egg is made, especially the outer layer and can not seem to understand the trick to this meal. However, it is pretty simple to make one and NFC is going to describe to you the easiest way to go about it




      Ingredients
             

      1 quart oil for frying

      4 eggs                                                    

      2 pounds pork sausage                                                    

      4 cups dried bread crumbs, seasoned                                                    

      1 cup all-purpose flour                                                    

      4 eggs, beaten                                                    

      Directions
      Preheat oven to 350 degrees F (175 degrees C). Heat oil in deep-fryer to 375 degrees F (190 degrees C).

      Place eggs in saucepan and cover with water. Bring to boil. Cover, remove from heat, and let eggs sit in hot water for 10 to 12 minutes. Remove from hot water, cool and peel.

      Flatten the sausage and make a patty to surround each egg. Very lightly flour the sausage and coat with beaten egg. Roll in bread crumbs to cover evenly.

      Deep fry until golden brown, or pan fry while making sure each side is well cooked. Bake in the preheated oven for 10 minutes.

      Cut in half and serve over a bed of lettuce and sliced tomatoes for garnish. If mustard is desired it looks beautiful over this.

      LEMON GINGER SAUCE

      One word for this "WOW". We are really loving the presentation of this meal, pretty creative. Also, just by looking at this pictures, you can almost smell the perfect aroma of this sauce. It is colourful, artistic, innovative and we are so sure it will taste amazing. Their are many and unique sauce recipes, but this sauce by chef Etim seem to be a masterpiece, with some many attention given to it.
      Chef Etim did great with this meal just like his other recipes and he gave us detailed directions to help everyone make exactly the same or close to the same thing.
       
       
       


      STRAIGHT FROM MY KITCHEN.

      LEMON GINGER SAUCE

      Ingredients

      2 chicken breast. (Shredded)
      1 cup chicken broth
      2 medium carrot
      1 red bell pepper
      1 green bell pepper
      1 Tbsp ground black pepper
      2 Tbsp. Tamari or Soy Sauce. ( I used soy sauce here )
      2 Tbsp. water
      2 tsp. sesame oil
      6 Tbsp. fresh lemon juice
      2 Tsp lemon zest
      1 Tbsp balsamic vinegar
      1 Tbsp red cooking wine
      ½ Tsp apple cider vinegar
      1 tsp. fresh grated ginger
      4 cloves garlic, minced
      2 tsp. cornstarch
      1 Tbsp sesame seed for garnish

      Directions


      • Spice the chicken breast with 2tbsp soy sauce, black pepper and lemon zest for 10-15 minutes.

      • Chopped the carrot and boil for 3 minutes to soft, cut other veggies set aside.

      • In a small bowl combined all the ingredients except sesame seed. Chicken broth, Soy sauce, Sesame oil, balsamic vinegar, apple cider vinegar, red cooking wine, Ginger and Garlic. Mix this very well to combined set aside.

      • Heat up 1tbsp veg oil in a medium high heat add the chicken stir- fry till golden brown, now add the sauce into the chicken pan stir-fry for a minute add the veggies stir-fry for 2 minutes taste for salt.


       
       
      Served along with rice and garnish with sesame seed.

      Chicken Pepper Soup and Potato

       

      One of the amazing things about pepper soup is that its one of the few broths you can make to any quantity you please and it wont lose its spicy attribute. Their are numerous types pepper soup like the fish pepper soup, beef pepper soup etc. Though their taste may differ, they all have one thing in common, and that is the aspect of the soup being pepperish. Oluwakemi sent us this unique Chicken and potato pepper soup and here is how to make it.

      Ingredients


      Chicken
      Pepper soup spices
      Irish potatoes
      Curry and thyme
      Salt
      Seasoning cube
      Dry/ fresh scent leaves (efirin)
      Onion
      Black pepper
      Ginger

      Directions

      Wash and boil chicken with onion, salt, thyme and curry (in very little quantity just to give the chicken colour without making the water too yellow)


      When boiled, take out chicken and add pepper soup spices to any quantity you please, ginger, black pepper and seasoning cube.

      Few minutes after boiling add washed scent leaves.


      Boil potatoes with salt.

      When the potatoes are boiled, peel and serve with the pepper soup.


      If you don't put enough pepper it wouldnt be 'pepper' soup, it would just be chicken sauce and ginger.

      Another great thing with pepper soup is that you can go to town with it. You can make spaghetti and enjoy them together, it can be enjoyed alone, with plantain, yam, bread or eba... Don't be afraid to try new compliments.

      Italian Meatballs Noodles with Mixed Vegetables

      Vegetable noodles, pizza noodles and so many other noodles recipes have come up to further spice up our love for it. Noodles is that one great meal that most people can not do without. It is tasty, filling and fast to make.
      Adedotun sent us a noodles recipe that involves the use of Italian meatballs and mixed vegetable. Meat ball recipes varies from the meatball pasta to spaghetti with meatballs to black bean beef meatballs and Italian meatballs noodles
      The name Italian meatballs noodles may look a little hard to make, but Adedotun has simplified the process for all to learn and here is how.

      Ingredients

      2-meat balls cut into chunks
      2-packs of noodles Indomie
      1/2-cup of mixed vegetables
      1-Egg boiled for 15 minutes
      1/2-tea spoon of dry ground pepper

      Directions

      • Bring a half medium pot of water to boil then throw your 2 noodles inside

      • When the noodles get soft drain the water out and put your chopped meat balls

      • Add in mixed vegetables, ground pepper and 2 table spoons of oil stir and cover it for about 3mins

      • Bring a egg to boil for 15mins on the side

      How to Extract Coconut Milk from a Coconut



      Coconut milk tastes great, I personally love to use the coconut milk extract for my smoothies and fruithies, it adds that extra silk, classy and exotic taste to drinks or even recipes.
      However, most people do not know how to extract the coconut milk and due to that settle for the canned coconut milk, which , according to researchers could be detrimental to ones health.
      Not to worry, here are easy steps you can take to extract coconut milk from a coconut, now you can enjoy your coconut milk by yourself, with family and friends.

      What you need

      A bowl

      Corkscrew to pierce the eyes

      Sharp implement for Cracking the coconut

      And a blender

      Directions


      • The first thing to do is to pierce the three black eyes with a sharp instrument 


      • Then you drain the watery juice out of the eyes ( this is not your milk :) 
      • Crack open the coconut with a sharp instrument 
      • Remove the white meat from inside the two halves of the coconut shell.
      • Wash the coconut meat and cut into tiny pieces
      • Place the coconut meat in a blender, add warm water (Vary the amount of water to produce thicker or thinner milk) and grind into a smooth paste


      • Pour the mixture of coconut milk and chaff into a sieve and squeeze out as much milk from the chaff as possible.

      Sausage Spaghetti and Sauce

      Spaghetti is just that food we love so much and can do without. It is unique, tasty, exotic and even classy. The love of spaghetti has led to many different innovations on how to prepare the dish. From just cooking it ordinarily to jollof spaghetti, Chinese spaghetti etc.
      Herbheebah sent us how she made us this innovative spaghetti recipe and we are so loving it. At first look, this recipe might look complicated and not easy to make, but this happens to be one of the easiest spaghetti recipe ever.
      Here is how Herbheebah made her sausage spaghetti and sauce
      Ingredients


      Sausages
      Spaghetti
      Carrots
      Green Pepper
      Tomatoes
      Pepper
      Onions
      Vegetable Oil
      Salt to taste

      Directions
      •  Cut sausages into 4 equal parts, pierce raw spaghetti into it, then boil with water and salt till cooked.
      For the sauce:
      • For the sauce, cut carrots, green pepper
      • Blend tomatoes, pepper and onions
      • In a pan, put vegetable oil, add your sliced and blended vegetables, add spices, and fry.
