Ingredients:
Minced beef or chicken,
Salt
Stock cube
Curry,
Thyme
Garlic,
Cooked and whisked raw eggs
Blended pepper and
Onions.
Directions
Most people bake the potatoes, but I prefer boiling with salt and stock cubes, (it should not be too soft when boiling, remember you are going to bake later on )
- When cooked, drain and cut in half vertically or horizontally, which ever way you prefer, make a hole in both halves by scraping and set aside.
- For the filling, put vegetable oil or butter in a pan, heat
- Add onion and garlic, thyme, add the blended pepper, fry a bit, add minced beef, salt, curry and stock cubes.
- Simmer and allow to cool off, then stir in your boiled eggs which you cut in cubes already.
- Fill the potatoes and cover with the other half
- Dip in wisked egg and bake till brown.
