Irish Potato and Veggie Soup

We love soups, and that is why we are always so happy when we come across new and  innovative soup recipes, Vivian sent in this cool irish potato and veggie soup recipe which we have tried out. This soup tastes great, looks great and is indeed healthy. It is a great dinner idea as you should always eat light for dinner. It is indeed a desirable meal for everyone who has tasted it, it will leave you wanting for more.

Ingredients.                                                                                        
  • ‎Flour
  • Groundnut oil 
  • Onions
  • Fresh yellow peppers, black pepper, chilli
  • Chicken/ snails, liver, kidney, chicken intestines. 
  • Curry, thyme, salt, Stock cube, nutmeg
  • Carrot, green peppers, spring onion, lettuce‎.                                                                          

Directions

  • Spice your chicken, snail, kidney, liver, chicken intestine to taste  in a pot until it starts to bring out little water on its own . Allow the spices to heat into the meat and lower your heat for 15mins.

  • Add water into your meat stock about a full cup and allow to simmer till meat is almost done.

  • In a dry clean pot Fry two dessert spoons of flour in ‎a little preheated groundnut oil until its a little bit brown, add your already spiced cooked meat items.

  • Mix the fried flour with the meat stock in the pot until its smooth, add in your already peeled and diced potatoes ( for me I cut in four equal halves).

  • Allow to boil for 20mins 

  • Add your sliced carrot, green pepper, onion, spring onion, black pepper to taste. Cut veggies the way you will like to see them in the pot but don't cut too tiny.

  • Serve after adding the veggies as heat kills the veggies.
