Mixed vegetables soup ( Carrot and Potato Soup)

Eating healthy foods is one of the key to staying healthy, so we are always happy when we come across healthy recipes.
The mixed vegetable soup is an example of that healthy meal. This recipe submitted by our subscriber Bilkisu (who has sent us various recipes) is a great meal to try out at home for a healthy and happy family as it involves the use of various recipes in which has their individual nutritional values beneficial to us.. Now you get additional idea on how you can inculcate the use of vegetables in your weekly menu.
Ingredients:
 
2 large carrots, chopped
3 med potatoes, peeled & chopped
1 1/2 cups stock
2 tablespoon tomato/pepper paste
3 sausages, chopped
1 eggplant, chopped
1 cupful chopped cauliflower
1 avocado, peeled and cut into cubes
Seasonings

Directions:

 
  • Parboil cauliflower in salt water for a few minutes. Keep aside

 
  • Cook potato and carrots in stock with tomato/pepper paste and seasoning till tender. Pour in a blender and pulse till smooth.

 
  • Put back on low heat, add the eggplant, cauliflower and sausages. Season with spices and simmer for a few minutes.

 
  • Garnish with avocado 


  • Serve with wholewheat bread 😋
