Ofe Akwu Stew

The people from the South Eastern part of Nigeria has so many soups and stews that it is almost impossible to know them all. Soups are taken seriously by Nigerians and diversity has made available multiple soups to try out. They come up with different and innovative ideas that you will just love to give a try. The Ofe Akwu is an Igbo native soup sent in by our amazing subscriber Jenny, who gives us the step by step procedure to making the Ofe Akwu Soup.

Ofe akwu stew (Igbo native stew)

Ingredients


Palm kernel
Ogiri
Dried fish
Stock fish
Beef (goat meat can do too)
Scent leave
Pepper, cubes and crayfish

Directions:

Parboil meat with seasoning to taste and set aside.

Boil palm kernel for min of 20mins to soften the flesh, pound and squeeze out the sauce with little water to get thick sauce.

Cook sauce in uncovered pot for 10mins, add both dry and stock fish. Add ogiri, allow to cook (now cover pot) for a while

Add crayfish, cubes, pepper (yellow type is better) and boil for 5mins, add scent leave and bring down after 3mins.

Best enjoyed with local rice.
