Miyan Gyada... (Groundnut soup) with fufu

One thing we appreciate about the Nigerian community is that, when you think you know all the soup in the country, you start to see new type of soups and you are just amazed by the innovation put into making this soups. That is one thing that makes the Nigerian nation a great one, our different ethnicity and groups has afforded us varieties in lifestyle, ideas and even food. One of this varieties sent by our subscriber (Deyinka) is the Miyan Gyada, also known as the groundnut soup.
This soup is a great idea to add to your food menu and you will just love it unique taste and texture.
Ingredients
 
2cups groundnut
Spinach leaves
Tomatoes
Pepper
Bell pepper
Ginger(optional)
Beef
Crayfish
Dried fish/stock fish
Locust beans
Salt and stock cubes to taste.
 
Directions

  • Blend pepper with ginger, toast groundnut in a dry non-stick pan for 5 mins and blend to powder, blend crayfish separately, mix with blended groundnut.
 
  • Boil beef , dry fish with one stock cube and onion with very little water for the juices to extract..
 
  • Add a little stock from the beef to groundnut powder to form paste.
 
  • Place a pot on heat, add palm oil followed by blended pepper. Fry till almost dry, add beef stock, followed by groundnut paste, if too thick add a little water to form a creamy consistency.
 
  • Add your beef, locust beans, one stock cube and stir.
 
  • Lastly add steamed spinach and leave to simmer for 3-5mins.
 
Serve with any swallow/morsel of choice ( I didn't peel my groundnuts)
For fufu.
Easy method.
 
1. Buy fufu powder and stir in boiling water till its ready when thick.
2. Buy ready made fufu.
3.From the scratch... Buy cassava tubers, peel and dice and soak for 3 days without changing the water to let fufu ferment. 
Drain tubers by placing in a cheese cloth and putting an heavy object on it. Let it sit for 2-3 hrs. Place drained tubers in a mortar and pound to a pulp.
Bring water to boil and stir pulp in water till it forms a paste OR boil drained tubers in water and pound to a pulp.  I've tried all 3 methods...
