Eba and Edikang-ikong soup


Edikang Ikong is that popular meal common among the southern eastern people of Nigeria, Though it may seem undesirable because it involves the use of mainly green leafy vegetables, Edikang Ikong is a delicious meal when you have a taste of it, This soup can be taken with any swallows like eba, fufu, wheat etc. It can also be taken with white rice.
The soup also come with a lot of health benefits accruing from the nutrients of green leafy vegetable, it is indeed a most have for every family.
The Edikang Ikong is cooked by people differently, though the outcome is usually the same or slightly different, here is how Deyinka made hers.


Ingredients.. 

Water leaf
Ugwu
Crayfish, 
Stock cube 
Onions
Cameroon pepper
Smoked ponmo
Palmoil
Dried and smoked fish
Rodo
Stock fish
Prawns
Goat meat/beef

Directions


  • Rinse both vegetables well, slice onions, and grind pepper.. 

  • Boil beef with onions ponmo, stock fish and fish, add salt and stock cube. 


  • When beef is done, add crayfish, sliced pepper, more onions, and palmoil leave to simmer for 5-7mins. Check for salt.

  • Add drained water leaf, stir and leave to cook for another 5-8 mins, then add ugwu and cook for another 6mins. 

  • Turn off heat and serve with EBA.
