Home Made Chicken Pie

Chicken pie is that one snack that every Nigerian has eaten while growing up. The fast food Mr Biggs just seem to mean meat/chicken pie to me back then.
Meat pie is really a unique meal that is filling and tasty with a good texture that gives a wonderful sensation to the tongue, Sometimes I like to call it the surprise pie, because of the fact that the pie covers what is inside of it. Trust me, you will be surprised by some road side so called meat pie which seem to have just potatoes inside(just when you think you where going to see some meat/chicken in it), that seriously is a bummer.

Ingredients

1kg Self rising flour
1 tablespoon Baking powder,
500g Butter
2 medium sized Carrot
2 medium sized Irish potatoes
500g minced Chicken
Salt to taste
2 Seasoning cube
1 teaspoon Thyme
2 cooking spoon of Vegetable oil

Directions

For the ‎dough
Put 1kg of flour in a bowl

Add 1tablespoon of baking powder and some pinches of salt, mix together

Add 500g of butter bit by bit and mix together‎.

Add water bit by bit  and knead continuously till the dough is formed.

Leave dough for about 5-7 minutes

For the filling
Dice carrot, boil Irish potatoes and dice as well, minced chicken, cut onions into tiny pieces, once all is ready.

Put little vegetable oil on fire, pour onions, add the minced chicken stir continuously till minced chicken becomes brown.

Add little water, stock cube, thyme and leave to boil once it starts boiling add the diced carrots and Irish potatoes, cook till all done.

Preheat oven to 170°C (335°F)

Knead the dough more and roll it out to achieve a 5mm thickness.

Make a round cut on the dough with a cutter Scoop some fillings into the center of the round cut

Break an egg and beat and rub on the inside edge of the cut chicken pie dough so that it well sealed

Fold one part of the dough to meet the other end
You can seal the pie by using your fingers or fork and pressing along the outside

Repeat steps until all the dough are gone.

Place your pies on a tray, rub the egg on the pies. This gives the pie a golden brown look when done.

Bake for about 30-45 minutes or until the pastry has turned a golden brown.
