Smile, it is really good for your emotions. So picture this, you wake up in the morning all grumpy and moody, on getting to the kitchen, you where offered with pancakes with a smile on it (picture perfect).
Pancakes is that one special meal that just makes your day special and truly put a smile on your face.
Lanre made this pancakes with coconut milk and coleslaw garnished with grounded meat and here is how it was made.
Pancakes:
1 cup 250ml Coconut milk
2 Eggs
1 cup All purpose flour
1 tsp Baking powder
1/2 tsp Baking Soda
3 tbsp Sugar and 2 tbsp Butter

Coleslaw:
Small sized cabbage
Carrots
Green Pepper

Directions
- Break the eggs in a bowl and beat till smooth
- Add milk and mix
- Then add the flour, sugar, baking powder and soda to the egg and milk, then stir well or use a blender to blend for a smoother mixture
- Leave to rest for 15mins and stir again after,
- Now heat a non stick fry pan on medium heat and get a serviettes paper and scoop a spoon of butter into it and wrap them gently rub over the surface of the pan till it's evenly coated
- Now pour the mixed pancake onto the pan in a circular motion starting from the middle
- Flip to the other side when bubbles starts to show.
Coleslaw
- Shred the cabbage, and grate the carrots, then dice the green pepper
- Grind the meat with a meat grinder or simply grate it after boiling and frying.
- Now mix the cabbage, carrots, green pepper and meat in a bowl or tray and refrigerate
- Serve when chilled use mayonnaise or salad cream for dressing.
