Ayan-ekpang with Etighi aka Okro soup

In Nigeria, we just love our slimy soups, from Ewedu to okra and many more, the Ayan-ekpang with Etighi is a special soup among the Efiks and it has been usually viewed as one of the most difficult soups to make.
 At NFC, when it comes to food, our thought is, how hard can it be. So our amazing subscriber  Ushike Egodo has come up with a detailed description of the Ayan-ekpang soup to help us know the best and easy way to cook the soup.                                                        
 
Ingredients

Water yam
Okro
Shrimps
Fresh Fish
Onions
Crayfish
Pepper
Palm Oil
Uziza Leaf

Directions


Ayan-ekpang 

Take water yam, peel it wash and grate using the local grater. Tie with moi moi leaf and boil until cooked. 

Etighi / Okro soup 

I used fresh sea foods, because I prefer them,  

Wash your shrimps and fresh fish, add onions, salt to taste and any seasoning of your choice and cook for 20 (twenty) minute, add water , add ingredients, like crayfish and pepper, a drop of palm oil, uziza leaf/ hot leaves, cover to cook for 15mins then add the okro/Etighi stir and cook for 5 (five) minutes. 

 And your food is ready to eat.
