Egusi Soup Made with Cowleg

 Egusi seeds are the fat- and protein-rich seeds of certain cucurbitaceous plants.  Egusi is a special soup accepted by everyone in Nigeria, it is made by mostly every Nigerian family and it's a soup that we eat at least ones a week.
Egusi is a soup eaten with various Nigerian swallows( you could eat it with either Eba, wheat, semovita, pounded yam, semolina, or fufu), some people also eat egusi with white rice, although this complement is not usually used by most. The Egusi soup is cooked differently by the people of Nigeria, here is how our lovely subscriber Mimi made hers:

Ingredients
Cow tail
Stock fish
Dry fish
Egusi
Dry pepper
Fresh pepper
seasoning
palm oil
vegetable leaves
Bitter leaf.

Directions

Parboil Cow tail adding onions, salt, stock cube, any meat seasoning of your choice. 
Add warm water to melon, stir and cover
.

Fry oil, add onions, fresh and dry pepper, add a pinch of salt to taste, stock cube, stir and cover f‎or few minutes
Add Cow tail, dry fish, stock fish, stir and cover for 3 minutes.

Add soaked melon until  properly cooked‎, do not stir.
Add bitter leaf(properly washed to extract bitterness). 

When egusi is done, stir properly and add vegetables. 

Remove immediately, your egusi is ready to be served.
