POUNDO YAM AND EGUSI SOUP

 
Ingredient
 
Melon seeds,
Cray fish,
chicken,
chicken stock,
palmoil,
stock fish,
 ugu leaf,
 Dry Fish,
Afang Leaf‎,
wooden spoon,
locust beans,
Salt
ginger and garlic spice,
cinamon,‎
onions,
dry pepper,
groundnut oil.

Method for seasoning chicken
 
  • cut chicken to desirable size and clean
  • To the chicken, add ginger and garlic spice, dry pepper, cinamon(a pinch),stock cube and salt,make sure to rub the spices into the chicken and add 1/2 teaspoon of olive or groundnut oil and diced onions. Leave the mixture to stand for atleast 3-4hrs or overnight in a fridge.

Method for Egusi soup

Blend egusi with crayfish and onions

Into the egusi mixture, add little chicken stock and make to desirable thickness

Heat palmoil and add locust beans to fry a bit,add the egusi lumps to fry

Add pepper, chicken stock and seasoning ‎,stock fish and stir with wooden spoon 

Add the chicken, dry fish and‎ ugu leaf cook for 3mins

Lastly add the afang leaf
