Carrots
Red Pepper
Green peppers
Strong tomatoes
Boiled eggs
Onions
Spring onions
Vegetable oil,
Olive oil
Soy sauce
Ginger
Garlic

Mayonnaise

Bay leaf
Salt
Directions
Cut the Carrots, red and green peppers, strong tomatoes, egg white of boiled eggs, onions and spring onions, set each aside.
Cook the chicken wings, limiting seasoning to bay leaf, ginger, garlic, curry,stock cube and salt. cook till tender. you will need the stock.
Put a dash of olive oil in a pot and stir-fry Separately, the green pepper and spring onions,set aside.
Under a low heat, add a dash tablespoonful of vegetable oil, olive oil in a pot, heat and stir-fry the onions, add the red pepper when onion is golden brown, continue to stir, add the tomatoes and allow to cook for about 40 seconds and add a teaspoonful mayonnaise( do not be tempted to add so many seasonings to avoid conflicts of taste, the different flavour of the oil used will help just fine), stir and add the carrots and the stock from the wings and cook for 5 minutes.
Add the wings and egg white and a half a teaspoon of soy sauce, taste the sauce before adding salt and stock cube.
Cook for 5minutes before adding the green pepper and 2/3 of the spring onions, the other portion will be used for dressing. stir and cover for a minute.
Serve with rice or brown bread.
Note: the sweet-sour taste is to be produced by the tender carrots and the fresh tomatoes.
But I learned to take it further by adding few little cubes of pineapple to the tomatoes and dicing my rice with vinegar or lime.
