Mexican Rice with Coleslaw.


 Fried rice, white rice, jollof rice, brown rice and so many rice recipe has kept us loving the food through the years without getting tired of it. Bella made this Mexican rice with coleslaw and she wants to teach us how to make it.
The Mexican rice with coleslaw looks amazing and we bet it tastes great too. Check out how Bella did it.
 

Ingredients :

2 tablespoons
vegetable oil or butter
1 cup white rice
1/2 cup finely chopped onion
1/4 teaspoon salt
1 tablespoon minced garlic
1 8-ounce can tomato sauce
1 1/2 cups of beef or chicken broth
1/2 cup frozen mixed vegetables (such as corn, peas and carrots), thawed (u can also use fresh ones) 2medium Irish potatoes steamed already (which is optional because the real mexican rice does not include it).

Directions


 Heat a large sauce pan on a medium heat

Add oil and rice and cook, stirring, until the rice is just beginning to brown,4 to 5 min.

Add onion and salt and cook, stirring, until the onion begins to soften, about 2 minutes.

Add garlic,stirring until fragrant, 1 minute more.

Pour tomato sauce over the rice and seasoning,cook,stirring, for 1 minute.

Stir in broth/beef, and the potatoes,bring to boil.

Reduce to a simmer, cover and cook until the rice is cooked, about 15 minutes.

Stir in vegetables and serve.
