Coconut Rice with Plantain and Moin Moin



Ingredients For the Coconut Rice

Coconut
Pepper
Tomatoes
Onions
Titus Fish
or Sawa
stock cube
Salt
Rice
Vegetable Oil‎

Directions


 coconut rice
  • Grate coconut, pour some water and sieve to extract the coconut water.
 
  • Cut pepper, fresh tomatoes and onions
  •  
  •  Boil the fish with stock cube and salt(I prefer titus fish but sawa can also be used..
  • Pieces the fish and remove all the bones‎.
  • Put water on fire, pour the rice add salt and stock cube, add vegetable oil, cover. Once the rice is half done pour the fish, onions, pepper and tomatoes.. cover to cook till its done.
For the moin moin
 
Ingredients for the moin moin
 
Beans
Onion
 
soak and peel the shaft of the beans...add onions and pepper to grind...I love using fish so mash fish in the moin moin.

wrap moin moin in leaf..and let it cook for about 30 mins..

Fry plantain as usual

For Fruit Salad ( As appetizer)
 
pawpaw
banana
watermelon
pineapple
carrot and cabbage....

Arrange has desired
