One cool thing about Nigerian recipes is that we have a funny name for the new stuffs we come up with. An example of this is the Gizdodo. This simply means gizzard and dodo (fried plantain). Some
people don't like gizzard and definitely won't like this recipe, but we have tried the same recipe using beef or chicken (see here) instead of gizzard and it came out really nice. This recipe is a lovely idea to add to your menu at home, and also a cool stuffs to add to your party menu. Think about it, Gizdodo plus chapman (that makes a lot of sense).

Ingredients
300g gizzards
2 ripe plantains
1 green bell pepper
1 red bell pepper
3 plum tomatoes
1 large onion
2 stock cubes
1/2 teaspoon of curry
1/2 teaspoon of thyme
salt and pepper to taste
Vegetable oil for frying
Directions
- Clean the gizzards thoroughly
- In a clean pot, add water and put the gizzard in and season with onion,curry, thyme, stock cube and salt to taste leave the gizzard to cook until it is soft and tender
- Cut the plantain into cubes also chop the gizzards about the size of the cubed plantains
- Set a pot on fire, add oil and fry the plantain until brown, transfer to a kitchen paper to absorb the excess oil
- In the same oil fry the gizzards and also place on a kitchen towel to remove excess oil
- Blend onion, Tatashe , habanero pepper/atarodo, tomatoes
- In a pot, add oil, on medium heat, add chopped onion, fry till they are translucent add the blended mix and fry for about 12-15 minutes, then add the stock cubes, salt to taste and allow to simmer
- Add the gizzard to the sauce, mix well, then add the fried plantain, the chopped onion, red pepper, green pepper (optional) to give it that colour ) mix all together and your gizdodo is ready.
*Note feel free to use any substitute you feel like, for this recipe I used beef because I am not so much of a fan for gizzards.
