Ekpang Nkukwo that is coco- yam pottage in English is simply made with cocoyam and some water yam and is one of the traditional delicacies of the Efiks.
Preparing Ekpang Nkukwo can take some time especially with the wrapping of the cocoyam
This particular recipe was sent by Di.Ofem, here is how she made her delicious Ekpang Nkukwo (coco-yam pottage)
*I Just finished cooking this food and i decided to share the recipe with u. Its calabar delicacy. Ekpang-nkwukwo, here's what i used.
Ingredients
1 medium size water yam
8 small size coco yam
Cocoyam leaf or vegetable leaf
Cray fish
Dry fish
Stock fish
Kpomo
Salt
Pepper
Stock cube
Palm oil
Periwinkle
Scent leaf
Directions
- Peel your wateryam and cocoyam and grind them together
- wash and boil your periwinkle, put it in a pot and add palm oil to it,
- wash your leaf, tear it and start wrapping it in bits with the grinded wateryam placing gently into the pot that has the periwinkle.
- Boil water in a kettle and add to it, allow it cook for 10minutes
- Then add the rest of the ingredients (crayfish, dried fish and stock fish , kpomo, pepper, stock cubes
- Add the Palm oil with the scent leaf last and salt to taste and stir bring down and enjoy.
