Rock Cakes

 It is always cool to try something new for yourself, family and friends. When it all gets boring, the usual cookies, the usual cakes or cup cakes or even muffins, it is high time to shake up your creativity and try something new. Rock cake is that creative snack you can make for your kids birthday or any party snacks, it is also fast that you can make it in the morning for your kids lunch box. We all know that the kids love  sweet stuffs and they just love the rock cake. It is tasty, intriguing and easy to make. Here's a recipe on how to make the rock cake:
 
 
Ingredients


225g self raising flour
1 tsp baking powder
110g butter
 55g granulated sugar
110g mixed dried fruit
55g currants
1 medium egg
1 - 3 tbsp milk

Directions


Heat the oven to 400F/200C/Gas 6

Sieve flour, baking powder into a large bowl

Rub in the butter until the mixture resembles fine bread crumbs, stir in the sugar and the dried fruit

Make a well in the center , combine the milk and egg in a bowl, pour egg mixture into well and mix to create a stiff dough, adding more milk if necessary

Line 2 large baking trays with baking paper

Using a tablespoon divide the mixture into 12 portions, 5cm apart onto prepared trays

Bake in the preheated oven for 15 to 20 min or until golden brown
